
Back in May, I took a quick weekend trip to visit my college roomie/bestie Rachel and her hubs in Virginia. I knew that not only would I have a great time (I did!) but that we would be eating relatively healthy all weekend (we did!); we’re a sucker for anything hummus. So it was no shock to me when one morning she told me that she made her own almond milk.
Both Rachel and I bonded in college over a little thing called “I can’t have dairy”, so of course the dairy alternative beverage is a staple in her household. When she made me a morning smoothie full of veggies and her homemade almond milk I immediately had to ask for the recipe. P.S. Get you a bff who will share not only her delish smoothie recipe but her tips and tricks for homemade almond milk.
I was so hooked by this creamy deliciousness that I realized very quickly I was about to be an “I make my own almond milk” kind of gal! I even got all of the supplies for my mom for Mother’s Day so she could make HER own almond milk. Nothing says “I love you mom” like 3 lbs of almonds from Amazon!
So, for me, this almond milk has become a major staple in my morning coffee along with a few scoops of Vital Proteins Collagen. This collagen is vital (oh see what I did there?) for anyone who is looking to keep their hair, skin, nails and joints youthful af. Also, it’s literally tasteless and it dissolves perfectly in either hot or cold beverages! I cannot have a morning without this routine and the addition of the collagen (yup, Rachel’s idea again) has been great for my skin and I’m seeing awesome results.
So, this morning coffee/milk secret is something I didn’t want to keep to myself! I want to share with YOU the EASIEST go-to almond milk recipe and new morning addiction thanks to Rachel. I guess there are worse things to be addicted to, right? Ok, go make some almond milk you health-nut you and let me know how much you LOOOOOVE it!

Easiest homemade almond milk EVER!
- Soak 1 cup of almonds in water overnight in a bowl or Tupperware
- Strain the soaked almonds and pour into your blender
- Add 4 cups of water to your blender
- Add in a few squirts of Date Syrup (this low-glycemic sweetener is a game changer)
- Add in 1 tsp of pure vanilla extract for a little extra flavor
- Blend for at least 1 minute, if not longer and you’re home alone
- Pour your mixture into a nut milk bag, one cup at a time, over a measuring bowl to strain and squeeeeeze the life out of the almond pulp
- Pour your freshly made almond milk into a glass carafe and enjoy!
This will make about 32 oz of almond milk and will stay fresh in your fridge for up to a week…if you can keep it around that long! You will also have some nut dust as I call it when you’re done. You could keep it and add to future smoothies, try to use the almond powder as a potential flour for a gluten-free muffin. The possibilities are endless!
